Job description

We're looking for a Head Baker to lead our bakery's daily operations — someone who combines real technical craft with a business-minded approach to running a bakery. This is a hands-on leadership role in a small, close-knit team where your decisions directly shape quality, cost, and culture.

What You'll Do
● Lead production as our resident expert in sourdough and pastry — from fermentation schedules to lamination, you set the standard.

● Train and motivate our local team, running hands-on workshops and mentoring junior bakers to raise the skill level across the board.

● Own quality control — consistent product, every batch, every day.

● Manage wastage and costings — track ingredient use, minimize loss, and keep production costs aligned with targets.

● Report on the numbers — provide clear, regular reporting on output, costs, and efficiency to management.

● Improve workflow and efficiency — identify bottlenecks and re-design processes so the bakery runs smoother as we grow.

● Solve problems on the fly — equipment issues, ingredient shortages, scheduling conflicts — you find the fix, not just the issue.

● Communicate clearly — fluent English and strong communication skills are essential, both with the team and with management.

What We're Looking For

• Proven expertise in sourdough and pastry production
• Excellent English and communication skills
• A business-minded approach — you think in terms of margins, not just recipes
• Strong problem-solving instincts
• Experience training and motivating a team, ideally running workshops or structured training
• Comfort working with numbers and reporting — costings, wastage, efficiency metrics
• A natural eye for quality control and consistency
