KEY RESPONSIBILITIES
the incumbent is responsible for taking Shangri-La Surabaya to new luxury markets to make the newest dining destination at the city’s social hotspot. The role involves managing the kitchen and monitoring food preparation, delivering and presentation throughout the opening hours of the restaurants in accordance with the Shangri-La philosophy, policies and standards in the hotel and will include key responsibilities such as:
  • Efficient running of kitchen operations by overseeing food preparation and ensure their appropriate presentation to guests.
  • Creativity through product development, come up with delicious new recipes and present such to hotel management for approval prior to implementation.
  • Ensure kitchen colleague members adhere strictly to the recipe and food-preparation standards laid out by the Executive Chef based on the Shangri-La Safety Food Safety Management System, HACCP and ISO 22000.
  • Ensure weekly inspections are carried out and reports are submitted for follow up purposes.
  • Ensure proper use and cleaning of equipment in order to prolong the use and prevent damage.
  • Ensure that the Hotel kitchen premises are clean at all times which contributes to our Environmental policy.
  • Communicate and ensure all hotel rules and regulations, which are to be strictly followed and assist to ensure kitchen personnel are of required standard.
  • Take full responsibility of portion control, usage, wastage according to recipe standards.
  • Maintain a professional and friendly attitude towards guest and colleagues during contact.
  • Drive the hygiene and sanitation procedures set by the hotel when handling food while implementing Shangri-La Food Safety Management System (SFSMS) at all times and assists to ensure all cooks are of required standard

REQUIREMENTS
  • Due to Government limitation, this position is only for Indonesian
  • High proficiency in English both written and spoken
  • Preferably degree in Hospitality Management/Culinary
  • With knowledge in western, european & asian cuisine
  • Minimum 5 years experience in similar capacity in International five star chain hotel
  • Preferably computer literate & with knowledge in Finance
  • A self-starter, displays initiative & is creative/open-minded
  • A team leader/builder, customer & people-oriented
  • Champion of culinary arts along with exceptional knowledge of local and international cuisines and have a natural passion in the subject.
  • Possess hands on experience in the kitchen operation with an attitude to deliver and have good understanding of its impact on hotel operation.
  • Able to treat the guests with courtesy and have a knack for building and maintaining positive relationships.
  • Self motivated by sincerely providing a helping hand to others to achieve shared goals and results.
  • Service oriented team player and have the ability to create a work environment which sparks creative thinking to drive sales growth.
